July 30, 2010. My Birthday 36 years. Only good thing: Meat, beer and noise. Was a gift from my friends 43 different bottled beers. At the end of the party says Bark. This gave a Blog. Thus was born Monich and Beer. Are my simple and honest opinions about the beers that I won and, of course, others will buy.
The recipe today is for those who like a wheat beer a little more orange than white. I've been tweaking this recipe pfg tv and now produce eight times. Every brew I've done one or the other setting but do not intend to change that last longer. Thus, following the recipe of the Alpine, wheat beer from Monich Bier. The recipe is for the production of 20 liters: MALTESE: Pilsen 2.20 Kg 2.50 Kg Wheat malt Carahell 0.38 Kg 0.10 Kg acidified Caraaroma 0.02 Kg 0.10 Kg Carapils Grinding taken in the same hand grinder in the arm. Mash 17 liters of mineral water. I started heating the water up to 45 C put malts. Kept at 42 C for 10 minutes I raised to 50 C and kept for 15 minutes I raised to 55 C and kept for 10 minutes I raised to 66 C and kept for 30 minutes I raised to 68 C and kept for 30 minutes Come up 78 C and kept for 15 minutes RECYCLING: I recirculation pfg tv with a slotted spoon and pot, about ten times and was a 2 liter pot. WASHING: I used 18 liters of mineral water to wash BOIL AND HOPPING: I prepared a boil for 75 minutes 08 gr. Perle missing 60 minutes pfg tv 05 gr. Perle missing 30 minutes 10 gr. Perle missing 15 minutes COOLING: I used two chiller for cooling. One in a bucket pfg tv with ice and the other in the pan. Only by passing water within the chiller. Got through about 18 liters for the fermentation bucket. OG = 1.058 BREW AND MATURITY: pfg tv WB06 used the yeast fermenting bucket I left the controlled temperature of 18 C for 5 days. I lowered pfg tv the temperature to 0 C for 2 days. I exchanging bucket and left for 5 days ripening at 10 C for 5 days. I lowered the temperature back to 0 C for 2 days. PRIMING: We use 9 grams of brown sugar per liter. BOTTLING: Got bottling 27 bottles of 600 ml. About 16 liters. RESULTS: After 10 days refermentando in the bottle, this was the result. FG 1.012
This is the beer that my friends ask me to do more. First because it is not as bitter and because it is quite refreshing. Even being a lover of hops one'm also fond of wheat beers. And I did this the way I like it. I follow, improving revenue and seeking new flavors. Always with the help of friends pfg tv and mostly family. Until next.
Anonymous, thanks for visiting and for your question. Refermentei between 16 and 18 degrees. In the mean time to refermentar the bottle is the same as was ripening. So it was two weeks maturing, it will take two weeks to refermentar in the bottle. A hug. Delete pfg tv
Monich'm mis eat out a doubt, Sunday now I have to do the bottling and from what I saw in the recipe you used brown sugar for priming, but u reversed it, if so what proportion of water that you used. You put the direct priming in the fermenter and mixed or placed gradually in each bottle, u could detalahar me well this step because it is already almost finished pfg tv my beer and get ready so I'll be posting the results on your blog. Oh my name is Rodrigo and I'm from São Paulo capital. Delete

Hello Monich'm wanting to make your recipe and I have a doubt about the wheat malt I just found malted wheat course, now do not know if it's pfg tv the same thing or change something, would you pass me the place where they do not buy think. Thanks I'm waiting Delete Reply
Matthew, that's right. Put malted wheat in the recipe but it is the same thing as wheat malt. There are other recipes that we can use the wheat grain itself without malting. Use in a witbier, for example. I buy my supplies here in Joinville in MasterBrau and WE in Porto Alegre. But you find the wheat malt in any shop supplies. After recounts how she was. A hug.
